There’s something about a warm, golden pot pie fresh from the oven that feels like a hug on a plate. Am I right? But let’s be honest—who has time for a long list of ingredients on a busy weeknight? That’s why this 5-ingredient pot pie is a lifesaver. It’s creamy, comforting, and comes together with minimal effort, making it perfect for those nights when you need a home-cooked meal without the fuss. The best thing…it’s a family favorite and on my dinner rotation a few times a month.

The ingredients you will need to make the Pot Pie

  • Pie crust – I use refrigerated pie crust dough. Makes it a whole lot simpler.
  • Cream of chicken soup – You can also substitute cream of mushroom or cream of celery soup.
  • Mixed Vegetables – I use frozen mixed vegetables that include carrots, corn, peas and green beans.
  • Cooked Chicken – Typically I cook and use chicken tenderloins
  • Deep dish pie pan – Use a deep dish pie pan since the chicken pie has a lot of filling and will prevent overflowing.
  • Butter
  • Salt and pepper
  • Heavy whipping cream (optional for thickness)
  • Shredded Cheese (optional for taste)

How to Make Chicken Pot Pie

  • Season them up and cook your tenderloins. Chicken tenderloins typically take around 15-20 mins to cook depending on the cooking method. I put mine in the oven.
  • Place your cooked chicken and a couple pats of butter in sauce pan over medium eat. Make sure the pan is big enough for the soup and mixed vegetables.
  • Add one can of soup to the chicken.
  • I like my pot pie to be a bit more firm, so I add 1/2 cup of heavy whipping cream instead of water.
  • Stir in one package of mixed vegetables (32 oz bag). If you want a more creamy pot pie, add less vegetables.
  • Remove chicken and vegetable mixture from heat. Place in pie crust. Spreading evenly.
  • Totally optional, I sprinkle shredded cheese on the chicken/vegetable mixture before putting the top crust on.
  • Pinch or fold over the edges (however you want to do it) of the pie crusts together.
  • Brush an egg wash over the entire crust to get the pot pie all nice and golden.
  • Put a few slits in the top of the Pot Pie and bake at 350 degrees Fahrenheit for 30 to 40 minutes until the crust is lightly browned. If the edges are too brown before cooking time is over place tin foil around the edges to prevent more browning.

In less than an hour with just a few ingredients, you have a quick and easy dinner idea that will easily turn into a family dinner favorite.
