How to make Thin Mint Cake Pops
Thin Mint Cake Pops take the classic Thin Mint cookie to another level.
I recently discovered there is nothing better than my favorite classic Thin Mint Girl Scout cookie on a stick. They are so yummy, easy to assemble, and a crowd favorite….. even if you are not team Thin Mint.
Thin Mint Cake Pops
Lily’s bestie is a Girl Scout so of course, we showed our support with more than a few boxes of cookies this season. I had some fun a couple of weeks ago decorating a cake using the new Adventureland cookie and thought I would play around with a sleeve of Thin Mints.
Ingredients for Thin Mint Cake Pops
Makes 20 cake pops
Box of Cake Mix- I used Devils Chocolate
Styrofoam or floral ring for your cake pops as they dry
Chocolate Melts– I used light chocolate
A sleeve of Girl Scout Thin Mint cookies
How to Make Thin Mint Cake Pops
- Preheat the oven to 350°F
- Bake the cake mix according to the instructions on the box
- Bake in preheated oven for 30 to 35 minutes or until a wooden toothpick inserted in the center comes out clean.
- Let the cake cool completely on a wire cooling rack.
- Using a mixer cut up cake pieces and blend until the cake mixture comes together into a ball. The cake should be moist.
- Roll dough into small balls using a small and place on wax paper.
- Set aside.
For the Thin Mint crumble:
- Place a sleeve of Thin Mint cookies in a bowl and muddle/mash until they are grounded up. You can also put them in a food processor and gently pulsate until the cookies are crumbled.
Assembly of cake pops
- Place chocolate melts in a microwave-safe bowl. The bowl should be deep enough to submerge the entire ball in the chocolate. Microwave the chocolate in 30-40 second increments, stirring after each heating, until it is melted. Add 1/2 teaspoon of vegetable oil to the melted chocolate for a smoother consistency.
- Dip the lollipop stick into the chocolate and then into the middle of a cake ball. This will help the cake pop stay securely on the stick.
- Dip the cake ball into the chocolate until it is completely covered. Hold it over the bowl and tap it so the excess chocolate comes off. I gently tap my wrist until all the excess chocolate comes off.
- When the excess chocolate has dripped off, place the lollipop stick into the styrofoam block for about 10 seconds.
- When the cake pop is still wet, but not too wet, roll the cake pop in the thin mint crumble covering the entire cake pop.
- Place the cake pop back in the styrofoam block to completely dry.
- Wrap the cake pops or enjoy immediately.
