Stuffed chocolate chip cookie
What do you get when you combine chocolate chip cookies and frosting together? Delicious is what you get! When it comes to a stuffed chocolate chip cookie, it doesn’t get any better than this.
Over Spring break, Lily and I did some baking…and eating. I have yet to master baking without taking a few ‘samples’ of one’s work. If I didn’t, I wouldn’t be able to tell you how amazingly rich, sweet, and good these stuffed cookies are…and we could’nt have that now, could we?
Stuffed chocolate chip cookie
Making stuffed chocolate chip cookies is so easy. What I like about these cookies is, that you can use your favorite chocolate cookie recipe to whip up a batch of stuffed cookies. I must warn you, these cookies are rich, I would go small with whatever chocolate chip cookie you make. Side note: I seriously think I was lost before I got my mixer.
You may be wondering why there are pretzels on top of the cookies and plate. I assure you it’s not just for the photo. It’s to tell you that I took my cookie recipe and added crushed pretzels in for an extra bit of salty crunch, mixed in with those chocolate morsels. I have had the cookies with crushed potato chips and they are equally as good.
This is the buttercream frosting recipe I used
- 2 cups of butter ( whipped)
- Slowly add 4 cups of powdered sugar into the whipped butter
- 1 tablespoon of vanilla extract
- Add 2 tablespoons of milk
- Add a pinch of salt
- Beat till fluffy
For stiffer frosting (which is what you want for the stuffed cookies) add more powdered sugar and less milk.
How to stuff a cookie
- Assemble your cookies
Line your baked and thoroughly cooled cookies on a tray with the underside of the cookie facing up.
- Add frosting
Using a piping bag or cut the tip of a corner of a gallon bag, and apply your frosting in a circular motion. This will evenly distrubute the frosting in between the cookie.
- Add the cookie top
Gently place the top of the cookie together on top of the frosted cookie. Apply just enough pressure that the frosting comes to the side of the cookie.
- Final Step
Use a knife or spatula to remove any excess frosting from the edge of the cookie.
Although not necessary, I like to refrigerate my stuffed chocolate chip cookies so the frosting gets firm. Place the cookies on a plate for immediate enjoyment or in a enclosed tupperware container if you can’t quite eat them all at once.
And don’t forget a nice cold glass of milk to go along with your stuffed chocolate chip cookies.
