Easy Corn Salad with beans
This colorful easy Corn Salad with beans is so simple to make and would be the perfect salad for summertime dinner or gatherings.
This summer we are slow and steady around Duke Manor Farm. From our schedule to our food, it’s all gotta be easy. I can’t take all the credit for the corn salad recipe that I am sharing today ( we found it here) but it’s so easy that my 12-year-old daughter whipped it up. Side note: she is quite the cook around here….I better step up my game!

Colorful Corn Salad
Ingredients Needed
I am sure there are many versions of corn salad that would be equally delish, but I am partial to this particular one that Lily made…for obvious reason. This is the recipe that we modified. Our version does not have any oil, jicama, red pepper, lime juice, cumin, or cilantro. We did use some salt and pepper but let the flavors of the veggies and beans take over. Here’s what we used in our salad.
- large can of corn
- 1 can black beans ( drained)
- one red onion ( chopped)
- med size bell pepper ( chopped)
- 1 avocado ( diced)
After you have diced and chopped everything up, mix everything together and chill for at least 30 mins. This works great as a side or as a meal. Tip: If you add avocado to the corn salad, it is better to add it when you are ready to eat the salad. This way it doesn’t get all mushy.
Putting the salad in a clear glass bowl makes it that much prettier…and colorful on your summer table. See what I mean?

Yum, I make this salad too in the summer. I sometimes add fritos and a packet of taco seasoning along with a little ranch to have a spicy version. Nothing better than a fresh salad in the summertime.
