Vanilla layered cake with fresh blueberries

Vanilla layered cake with fresh blueberries
With fresh blueberries abundant this time of the year I decided to add them to a boxed vanilla cake topped with a homemade white frosting. Totally delicious and such a great cake for the summer months. I said I would never use canned frosting since I made my own…and I haven’t. Get my recipe here.
What you need:
Vanilla cake mix box or make your own
Fresh blueberries ( 1 -1 1/2 cup)
Homemade frosting. Get the recipe here. For white frosting just omit the cocoa powder.
What you do:
Bake two layers of vanilla cake according to the package directions. When cake is completely cool completely coat the top of the cake. I frost my cake with room temperature frosting and then put in the refrigerator to firm up.
Apply a bunch of frozen blueberries to the top of the cake. I always freeze my fresh blueberries so they don’t go so mush….. quickly. Besides, my kids love to eat them frozen. Put you next layer of cake on top and apply the remaining frosting to the to top and sides. Sprinkle a few blueberries ( or if you are like my kids….a lot of blueberries) on top and put in the refrigerator until you are ready to eat.

Now you have me wanting cake for breakfast. LOL. Blueberries have fond memories for me, my son would eat them everyday (the frozen ones) when he was little and always had a blue stained face. The cake look fantastic and mouth watering.
A slice of summer! This looks so amazing and just like summer. The boys and I are going to try your recipe as soon as the local blueberry farm is open. We love picking our own.
