What do you get when you sandwich mini chocolate chips between two layers of pancakes? Chocolate stuffed pancake and a whole lot of goodness.

I kinda stumbled upon this idea when I was making my ‘usual’ chocolate chip pancakes for the kids the other day. The kind where I included a few chocolate chips on top, and the kids are happy. Well, this time I decided to include another layer of pancake so the chips were actually stuffed inside….where have I been?

The kids were thrilled when we had them for breakfast ….and beyond thrilled when we had them again for dinner the next day (that’s what happens when Dad is out of town). Although I am no stranger to wanting to stuff my favorite breakfast food like my stuffed french toast, not sure why it took me this long to stuff my pancakes.

What you need

You don’t need much for this recipe just your favorite pancake mix (this is what I used) and some chocolate chips.

What you do

Pour your pancake batter on your pan or griddle. I use this griddle. It is the perfect size for cooking things like this and is super easy to clean up.
When the pancakes are beginning to firm (bubbles will begin to appear), place a spoonful of chocolate chips in the center of your pancake.
Spoon additional pancake batter on the top of the pancake, covering the chips.
Flip to cook on the other side.

What makes these pancakes amazing is the chocolate surprise in the middle. No one would even know what they are about to bite into looking at this picture. Looks like a traditional pancake.

But that’s all about to change as soon as you cut them open. The sky is the limit on what you can actually stuff in your pancake, but for right now chocolate chips are working ….even for dinner.
