The So Good Chicken Salad With Grapes Recipe makes a perfect lunch or brunch dish. Made with chicken, grapes and a dash of lemon juice , it’s my favorite way to make it.
Every year during the holidays I have an annual brunch with my girlfriends. A time to get together before the end of the year, to share stories, to laugh and just to celebrate us. Each year I serve something different. Last year I served stuffed french toast, get recipe here. This year, it was my so good Chicken Salad with grapes recipe. Yes….. it is so good. I wanted to share my secret ingredient that makes it a bit different then most chicken salad recipes out there.
As you know, I don’t hang in the kitchen often. On the blog I attempt to share recipes and ideas that work well for someone who likes easy and delicious. Hopefully to inspire others like me. A person who doesn’t like to spend a lot of time with prepping and baking , but someone who enjoys a great meal just like the next guy.
We ( as in my husband) cook a lot of soup around Duke Manor Farm. When my hubby is making a pot of Chicken Soup I always have him put some chicken aside so I can use it for Chicken Salad. We use our insta pot to cook the chicken breasts. It comes out so tender and soft. We use this 6 quart pot and have this 8 quart as well. When my oven was broke for several months this is how we cooked around here and loved it. Do you use an insta pot in your kitchen? Got any favorite dishes you want to share?
The So Good Chicken Salad With Grapes Recipe
Ingredients
- 1 pound of chicken cooked in a instant pot or boiled
- 1 cup chopped celery cut small
- 1 cup red or white grapes cut in half and then halved again
- 1 cup mayonnaise. I prefer to use Duke’s.
- a pinch of salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon of lemon juice….My secret ingredient. It balances out the sweetness of the grapes
Instructions
Add shredded chicken to a large bowl along with celery, grapes, mayonnaise, salt and pepper and lemon juice. Stir together until just combined. Meaning….don’t stir till your grapes are mush. Refrigerate until ready to eat.
The chicken salad can be served on bread or crackers. My favorite way to eat it is on a croissant with lettuce and tomato.
We also had various desserts, soup and of course mimosas to complete the brunch. What a perfect way to celebrate with your pals.

You really inspire me. Thanks for this recipe. Because of my stroke, my husband and I make meals together. Last night we made chicken piccata and although I had him take out the plastic wrap and meat tenderizer he forgot to pound out the meat and just found out he threw away the sauce and kept the burned part that I skimmed off and I said to keep the sauce together with the meat in a qt baggie. I work and think on fast speed and he works and thinks in very slow motion. It is quite challenging to me. A lesson in patience that I am slowly learning☺️

I love chicken salad and add not only grapes and apple but pecans as well. 😋
My recipe is just like this except for lemon,going to add that next time. I always have to take some out for my husband before I add the grapes…..he doesn’t like fruit in it lol. If you don’t have grapes try dried cranberries & toasted slivered almonds.

YUM. If you cook your boneless chicken breasts in the microwave, it has a lot more flavor. Adding a little onion is good too. 😉 Not a fan of grapes in CS. Sorry.
