Welcome to this month’s Cozy Living Series where I am sharing a 4 ingredient breakfast bowl recipe. When schedules are hectic throughout the week, my family really looks forward to being together for our weekend breakfast time. Every Saturday and Sunday we always eat a hot breakfast….that my hubby prepares. It is always something delicious and that the kids really like. This 4 ingredient breakfast bowl is the latest obsession. It’s super easy. Just 4 ingredients and it’s kid-approved. I imagine you can have as many items as you want in the bowl, but for right now we are settling on 4.

In this day of electronics, activities, and homework, our time at the kitchen table is such a gift. Typically on most weekdays, we are easy-going paper plates during dinner. Not the weekends. We are full-on dishware and cloth napkins. Conversation at the table is typically centered around the week, what we are doing together on the weekend, and a mention of something they are grateful for.
4 Ingredient Breakfast Bowl
What you need:
1 package of Roasted Redskin Potatoes with Sea Salt & cracked Black Pepper. We get the Kroger Brand.
1 package Breakfast sausage links
6 eggs
shredded mild cheddar cheese ( to sprinkle on top )
What you do:
Place potatoes and sausage links on an electric skillet, griddle, or frying pan and place on low heat. We have this griddle and love it. It also has a warming draw. Cover and cook for 45-60 mins. If you want breakfast sooner, turn up the heat and reduce your cook time.
When your potatoes look brown and crispy like it’s ready for the eggs. In a separate pan prepare and cook some scrambled eggs. When they are done add the eggs by folding them into the potato and sausage mixture.
Scoop into a bowl and top with shredded cheese. Serve with some orange juice and you’ll be the hero for the day.
