Easy Pancake Bites
As you know I am not very good navigating around our kitchen. My husband does the majority of the cooking, which is totally acceptable with me…and the kids. So this weekend when he told me he was going to put pancake mix in a mini muffin tray, I thought wow, easy pancake bites…. what an awesome idea. I thought it was genius and something I have never heard of….until I googled it this morning as I was writing this post, and saw that sadly he was not the first…and probably won’t be the last to do this.
But in the spirit of sharing this easy and quick breakfast idea, and making my hubby feel like he’s still a rock star in the kitchen…. since he reads the blog, I thought I would share how to make easy pancake bites, in the event you think it’s a genius idea as well.
What you need:
Pancake/waffle mix
Mini muffin tin
Cooking spray
What you do:
Prepare pancake mix per box directions
Pour the mix into lightly coated muffin pan
Bake in the oven at 350 degrees for about 10 mins
We tend to overcook the weekend breakfast and freeze the leftovers for breakfast during the week. It makes those early mornings run so much better. These little pancake bites are perfect for dipping or for eating plain, although next batch that we make, we will add some fruit like blueberries or strawberries. You could also put a few of the pancake bites in a bag and make it manageable breakfast on the go.
So there you go and here’s to all the pancake making hubbies….and the spouses that think their rock stars regardless.

they were like ‘oh this is weird’ they look like muffins. ha.
Well, I thought he had a great original idea…but sure was original to him!…love pancakes…especially in the winter for some reason….will have to try these cuties!!…How nice to have a guy around that can cook!
Way to go Mr. Duke Manor!!! Is he giving cooking lessons? LOL! My husband does not cook at all…Almost three months ago when I moved in with my mother to take care of my grandmother, I wondered if my husband would take the challenge on to try and make himself some food. One day he sent me a picture of some perogies he made and I was so proud:D A little crisp around the edges, but it’ll do. PROGRESS:D
